Beef: should have fat that is firm and creamy white.
Lean meat should be red, well marbled with fat, firm, with a fine grain.
Veal: has very little fat; the veal fat should be firm, clear, and white, not watery,

It is not marbled with fat.
Lamp: should be well covered with clear, white, firm fat.
Lean meat is pinkish red and marbled with fat.
Pork: is well covered with pork fat that is firm, white, free from moisture.
